Idaho is famous for potatoes, but that is the least interesting thing about it. Tucked into this state is Hells Canyon, the deepest river gorge in all of North America — deeper than the Grand Canyon. Nearby, Shoshone Falls drops 212 feet, taller than Niagara, which is why they call it the Niagara of the West. Idaho is dotted with more than 100 natural hot springs, many of them free and right beside the road, and the moon-like lava fields at Craters of the Moon were so otherworldly that NASA sent astronauts there to train. They call it the Gem State because you can dig up 72 kinds of gemstones here, including the rare star garnet. Come for the spuds, stay for the wild.
